Summary of Job Description

As a Correctional Facility Food Administrator 1, you would be responsible for the management of a food service operation for a shock incarceration facility, or for a correctional facility with between 300 and 799 beds, or you would assist a Correctional Facility Food Administrator 2 in the management of a food service operation of a facility with 2,000 beds or more. This responsibility includes, but is not limited to, the supervision of all subordinate food service staff and inmates assigned to work in the food service area, and the assurance that the food service operation is in compliance with the policies and procedures established by the New York State Department of Corrections and Community Supervision Division of Nutritional Services and New York State Department of Health State Sanitary Code, subpart 14-1. Additionally, you may perform duties normally assigned to subordinate staff, on an as needed basis.

Summary of Minimum Qualifications

You must take and pass a Civil Service examination in order to be considered for this position.

There are two examinations held for this position.  Please note:  New York State employees may qualify for both.  

For qualified employees of New York State on or before the date of the examination, the candidate must be a qualified employee of the New York State Department of Corrections and Community Supervision and have had three months of permanent competitive or non-competitive, including 55-b/55-c service, in a position allocated to Grade 11 or higher. In addition, the candidate must also have one of the following:

Either

1. verification of current college enrollment in a program in food management or hotel management with a concentration in food management, leading to an associate’s or bachelor’s degree. You will be restricted on the list until you submit proof of completion of the program to the Department of Civil Service;

OR

2. an associate’s degree in food management or hotel management with a concentration in food management;

OR

3. 60 college semester credit hours including 30 credit hours in courses directly related to food service or involving direct hands-on cooking courses;

OR

4. a bachelor’s degree in food management;

OR

5. a bachelor’s degree in dietetics, hotel management, or nutrition, with 15 college semester credit hours in food management.


For all other qualified individuals, on or before the date of the examination, the candidate must have one of the following:

Either

1. an associate’s degree in food management or hotel management with a concentration in food management AND three years of experience supervising food preparation and service in a food service operation offering a full-range menu and serving at least 300 meals daily. One year of this experience must have included independently overseeing the management of a food service operation on an assigned shift, or regional management of separate operations;

OR

2. 60 college semester credit hours including 30 semester credit hours in courses directly related to food service or involving direct hands-on cooking courses AND three years of experience supervising food preparation and service in a food service operation offering a full-range menu and serving at least 300 meals daily. One year of this experience must have included independently overseeing the management of a food service operation on an assigned shift, or regional management of separate operations;

OR

3. a bachelor’s degree in food management AND one year of experience independently overseeing the management of a food service operation on an assigned shift, or regional management of separate operations offering a full-range menu and serving at least 300 meals daily;

OR

4. a bachelor’s degree in dietetics, hotel management, or nutrition, with 15 college semester credit hours in food management AND one year of experience independently overseeing the management of a food service operation on an assigned shift, or regional management of separate operations offering a full-range menu and serving at least 300 meals daily.
